Why Highland beef you ask? We stumbled upon this great breed of cattle a few years ago and we decided we just LOVE them. They are hardy in our cold Colorado climate plus they have amazing parasite and disease resistance without being treated with a bunch of chemicals or antibiotics. Their long hair coats and massive horns make them a bit harder for a commercial producer to handle on a regular basis. On top of all the other cool benefits our Highlands will marble and finish to the point of we can get them to grade between choice and prime. We Butcher our animals as close to 30 months as possible to give them time to mature, marble and develop the well known flavor they are known for. We feel Highland beef is superior in flavor, tenderness and cooking ability when compared to other breeds including other heritage breeds. In addition it is lean with incredible marbling. It is one of the oldest purebred cattle breeds in the world, extremely hardy and first developed in Scotland.
